Healthy Chicken & Vegetable Stir-Fry with Brown Rice

 

If you’re tired of the unhealthy ingredients found in most take-out, but crave Asian flavors, this Healthy Chicken & Vegetable Stir-Fry with Brown Rice is the answer. In less than the time it will take you to wait for delivery, you’ll have this hot, healthy, tasty meal on your plate!

Yield: 4 Servings

Total Time: 35 Minutes

Prep Time: 20 minutes

Cooking Time: 15 minutes

Ingredients

1 pound skinless boneless chicken strips
2 cups broccoli florets
1 bell pepper, thinly sliced
1 carrot, julienned
2 tablespoons low-sodium soy sauce
1 tablespoon hoisin sauce
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
Sesame seeds for garnish (optional)
4 cups cooked brown rice

Directions

In a bowl, marinate the chicken strips with soy sauce, hoisin sauce, minced garlic, and grated ginger. Let it marinate for at least 15 minutes.

Heat olive oil in a wok or large skillet over medium-high heat.

Stir-fry marinated chicken until browned. Remove from the pan and set aside.

In the same pan, add more oil if needed and stir-fry broccoli, bell pepper, and carrot until vegetables are tender-crisp.

Add the cooked chicken back to the pan and toss everything together until well combined.

Serve the Healthy Chicken & Vegetable Stir-Fry with Brown Rice garnished with sesame seeds if desired.
